Chef Gregory Balland has evolved the restaurant’s menu towards inventive and lighter cuisine while never forgetting the family’s roots: the Southwest of France. It is this blend of tradition and innovation, paired with a wine cellar boasting over 400 selections, that has made the Maison renowned.

With a deep passion for pre-1950s jazz, a special love for Gypsy jazz, and an openness to contemporary jazz, he offers us an eclectic selection, always chosen from the finest ensembles, to share and explore the diverse world of jazz.
